My journey from India to Canada to become a chef

My name is Vishnudas Madambath Jayasankar and I'm a student of culinary management from George Brown College, Toronto. I just migrated to this beautiful country from the land of spices, India. India is a multicultural country with approximately 1652 indigenous languages. The food from northern part of India is totally different from southern part of the country. Most of the people in Northern part are religiously vegan so their food basically consist of vegetable, fruits and pulses. Whereas southerns are basically meat eaters.

Becoming a chef was always my dream. From my childhood days, I loved cooking. I used help my mother in her cooking. The biggest pleasure I get from cooking is when someone compliments me for my cooking.I started my career as a commie chef with InterContinental Hotels Group, Kochi for almost 1 year in Garde Manger and Hot section. Later on I worked as line chef with Casper and Gambinis at Muscat, Oman.Their ,I was working in Arabic Cuisine. Currently I'm not in the industry since I'm pursing my studies.

My philosophy to food is very simple, enjoy everything but there should be a balance. It is very depressing that now a days whenever we read any magazines or an articles we can only see the negativity surrounding food. But I think that food is something which should be enjoyed not detest. Eating a Cheese burger or pizza once a week will not kill anybody. But if that becomes the staple food, then it's a problem. We should use our common sense and logic to define our food habits.

Blogging has been a new experience for me. This is like first time I'm blogging on any topic. I have read a lot of blogs about food and nutrition. Blogs are very helpful to gain knowledge about something which you are new to. Once I read a blog from whiteonricecouples about their travel to Northern California Bay where they had Michelin star dinner, good wines from local wineries and local cheese. They also visited farms owned by the hotel from where they got their vegetables.This was well written blog with clear details about everything they experienced. I didn't feel any bias in their blog or any unfair criticism towards anyone.But I felt that should have posted more pics about food. Anyways it was one of the best blog I have ever read.

It will be fun now to express my thoughts through my blogs. I'm also very glad that my first blog is about something related to cooking and food. I really see blogging as platform where I can express my ideas and thoughts about food and other things related to this industry. This will also help my English skills since English is not my first language.

Anyways it was fun to write my first blog and I hope that you all like it.

   Bosc Pear I visited No frills market in Ennerdale road to select my fruit for the blog.I tried to visit St Lawrence market but it was closed since it was Monday. So I decided to visit No frills market near my house. I saw a lot of fruits like Dragon fruit, red plum, pomegranate etc. , but I decided to choose bosc pears because I have never seen that in India. Farmers are the most important people who contribute in each and everyone's life.We buy food, cotton cloths etc from shops which are produced by the farmers. Farmers contribute a lot in a countries economy. Most of the developed countries have a very strong agriculture background. Good farming helps the country to be self sufficient. I would like to write about my uncle, who is a farmer from my native place in Kerala, India. His name is Madambath Muralidharan. My grandfather was a farmer and my uncle continued his legacy. My father was not interested in farming, so he migrated to Mumbai for work. My dad always told me that my uncle was very passionate about farming. He used to accompany my grandfather from his childhood days to the farm and he was very curious about small details. He has been a farmer for last 50 years.His farming includes horticulture and animal husbandry. He produces banana,coconut and some vegetables like bitter gourd, long beans, yellow and white pumpkin
