Deep
fryer is one of the most important equipment in any kitchen. Fryer is used in
all types of kitchen. Every cuisine has deep fried foods. I every kitchen there
is a deep fried station. Deep fryer has a big role in North American cuisine.
North Americans are big fan of fried foods like French fries, meat balls, crab
cake etc. Deep fryer also one of the main equipment in Indian cuisine as most
of the snacks like samosas, pakoda, wada etc. Even though they are generally
used in commercial kitchen, now-a-days they are available in household model.
In the 1st century CE, a Roman
cookbook, Apicius,
appears to list the ancient Romans' first use of deep frying to prepare Pullum
Frontonianum, a chicken dish. Deep-fried foods such as funnel cakes arrived in
northern Europe by the 13th century. Modern deep frying began in the 19th
century with the growing popularity of cast iron, particularly around
the American South which led
to the development of many modern deep-fried dishes. French fries, invented in the
late 18th century, became popular in the early 19th century Western Europe. Doughnuts were invented in
the mid-19th century, with foods such as onion rings, deep-fried turkey, and corn dogs all being
invented in the early 20th century. In recent years, the growth of fast food has expanded the
reach of deep-fried foods, especially French fries.
The modern commercial fryer boasts
improved energy efficiency which is due in part to better heat transfer
systems. Commercial fryers with infrared heating or convection heating are
efficient, but often expensive. The most common fryer models are electric and
gas.
Generally deep fried food are very
unhealthy for our health. They are generally detrimental to nutritive value. The oils that foods absorb in their batter typically
contain large amounts of fats, especially saturated fats and Trans fats. Consumption of
large amount of fried food leads to many chronic diseases like obesity, heart
disease, and even cancer. But studies have shown that using that sunflower oil
and olive oil can have less effect on health.
Deep fryers are very important in commercial kitchen. In earlier day, deep frying was done in frying pan. But deep fryers are very efficient compared to frying pan. Oil consumption is less in deep fryers.
I have worked in deep fryers for more than 6 months. I found it very useful and it was very comfortable to work with. It was a good experience for me.
