Lamb chops : My favorite cut in lambs

Lamb Chops

I'm a hardcore Non-vegetarian who likes to eat all types of meat available in market. When it comes to meat I like beef, pork, lambs, chicken etc, but lamb meat is my favorite. In lamb, the best part for me is lamb chops. I like cuts with bones because I think they have more flavor than boneless meat.

Lamb is sheep meat which is under one year old. Sheep is generally divided into three types : lambs. hogget and mutton. In this, lamb is the most expensive sheep. Lamb chops is the rib area of the lamb, which  is also known as lamb rack.

Lamb rack is frenched and cut into single bone. The single bone is called lamb chop, The meat on the rack or bone is very tender and flavorful. Each lamb rack contain seven to eight chops. The rack is generally frenched to remove the connective tissues for elegant presentation. It is also the most expensive cut of lamb.I went to no frills to check the price and it was $ 4.34 per chop.Each chop was approximately 84 gm. Lamb chops generally don't have any trimmings which can be used for other purposes. So lamb rack or chops dishes are generally sold for high prices. The best method to cook lamb chops are grilled,broiled,braising and sauteed. Lamb chops are best cooked rare to medium rare.
I will be using braising and simmering method to cook lamb chops masala.

Lamb Chop Masala

INGREDIENTS

500 g lamb chops
350 g chopped onions
300 g chopped tomatoes
9 cloves garlic
1 inch ginger
2 1/2 tsp red chilli powder
2 tsp coriander powder
1/4 tsp turmeric powder
1/2 tsp garam masala powder
2 sprigs curry leaves
7 tbsp coconut oil
Salt to taste

DIRECTIONS

1. In a pressure cooker, add all the ingredients except oil and curry leaves. Before closing, let it boil.       Once boiled, close lid and pressure cook on low flame for 15 minutes.

2. Take out the lamb chops and fry them in 4 tbsp coconut oil, till charred on outside.
3. In another pan, add remaining 3 tbsp of oil, add the curry leaves and pour the gravy into it. On high     heat, reduce the gravy. Don’t forget to stir continuously. This may take about 10 minutes.

4. Then mix in the fried lamb chops into the thick gravy.

 This was a good experience for me because being a meat eater, I always wanted to share my views about my favorite meat and my favorite dish.
